Sarah's Recipe of the Month

Muscle soreness is a good thing, it means you're working hard at boot camp and your muscles are in the process of rebuilding. What you don't want is to be so sore that you don't push yourself enough or, even worse, don't show up for boot camp. Research shows that not taking in enough potassium can lead to excessive muscle soreness. You can get potassium from a lot of fruit or vegetable sources such as cantaloupe, tomatoes, sweet potatoes, orange juice, and beans. Here's a great recipe that packs a good amount of whole grains, protein, and potassium. This would be a great pre-workout boost for those early morning camps or an afternoon snack to fuel you through your evening workout.

Banana Oatmeal Chip Muffins
Makes: 12 muffins

Ingredients:
3 ripe-over ripe bananas, mashed
½ cup sugar
1 egg, beaten
1 teaspoon baking soda
1 teaspoon baking powder
½ cup whole wheat flour + ½ cup all-purpose flour
½ cup rolled or quick cooking oats
½ teaspoon salt
½ cup chopped walnuts or pecans
1 teaspoon cinnamon

Method:
1. Add sugar to mashed bananas and blend, add in the beaten egg and mix
2. Mix all dry ingredients in separate bowl and blend well
3. Add dry ingredients to banana mixture and fold
4. Add your chopped nuts
5. Spray muffin tin with cooking spray, fill ½ to ¾ the way with batter
6. Bake for 20-25 minutes at 350 degrees



Chi Chi Chickenless Vega Salad

Mix 1 can of Garbanzo Beans (rinsed and drained), 1 or 2 small handfuls of celery finely chopped, 1 -- 2 small red apples finely chopped, Lemon Juice, Veganaise to taste/texture preference, Sea salt and pepper to taste. With a fork, slightly mash the Garbanzo beans in a medium sized bowl. Add the Veganaise (a teaspoon at a time), until it reaches your desired consistency. Sprinkle some lemon juice and then toss in celery and apples.
